Drool Worthy Breakfast Recipes

 
Breakfast like a king they say. Skipping breakfast will only make your brain and body run low on fuel through the day, they warn. But pray tell me, how are you to wolf down the same upma, poha, corn flakes, paratha and sandwich on a daily/weekly basis and not want to skip "the most important meal of the day"?

Mornings began for me, with nothing but some coffee and a shower till some time ago! I'd gulp it down with a biscuit and rush to work and wait for lunch to happen... even at the risk of turning into a sleep-walking zombie till then. Until, a "smart cooker" suggested that I break my morning cuppa routine and jazz up my breakfast menu for the week. With yummy waffles, pancakes - or at least one of 'em among my breakfast items for the week, I broke the rut and got myself and my family all excited about B-R-E-A-K-F-A-S-T!

Here are some yummy and amazingly good-looking breakfast recipes that will never make you skip this meal

Waffles

Ingredients

500 ml Milk
500 gms Refined Flour
150 gms Sugar
7 Eggs Whole
50 ml Clarified Butter
12 gms Baking Powder

Method

  • Sift flour with baking powder.
  • Beat the eggs and add the milk.
  • Slowly add the wet ingredients to the dry ones and whisk well till you get a smooth batter.
  • Add the clarified butter to the mix and allow it to rest for an hour.
  • Using a ladle, pour the mixture into a waffle iron and bake for 10 minutes.
  • Serve with maple syrup.

The Plum Mocktail

Ingredients
Half a plum
60 ml Apple Juice
10 ml Peach Syrup
A squeeze of lime juice

Method
  • Blend all the ingredients and serve.
Bacon Pancakes

Ingredients
500 ml Milk
500 gms Refined Flour
150 gms Sugar
7 Eggs Whole
50 ml Clarified Butter
12 gms Baking Powder
100 gms Smoked Bacon

Method
  • In a heavy bottom pan, add the bacon and render the fat. Cook on low heat till nice and crispy. Drain, chop and keep aside. Reserve the rendered fat.
  • Melt the butter till it splits and cook it till it has a nutty flavour.
For the batter:
  • Sift flour with baking powder
  • Beat the eggs and add the milk
  • Slowly add the wet ingredients to the dry ones, whisk well till you get a smooth batter.
  • Add the clarified butter to the mix and allow it to rest for an hour.
For the pancakes:
  • Heat some of the rendered bacon fat in a heavy bottom or non stick pan
  • Mix the chopped bacon to the batter
  • Add spoonfuls of the batter to the heated pan
  • Cook till you see bubbles breaking the top of the pancake. Turn and cook the other side.
  • Serve with a dusting of cinnamon sugar, butter, pineapple jam, and maple syrup.


Sunny Side Up Multi Grain Pizza


Ingredients
1 cup whole wheat flour
1 cup oat flour
1/4 cup cornmeal
1 teaspoon baking powder
2/3 cup milk
1/4 cup cooking oil
2 8 ounce pizza sauce
1/2 green pepper, cut into rings
1/2 sweet red pepper, cut into rings
1/4 cup sliced pitted ripe olives
3 pcs eggs - sunny side
11/2 cups shredded mozzarella cheese (6 ounces)
11/2 cups shredded Cheddar cheese (6 ounces)
2 tablespoons grated Parmesan cheese

Method
  • For crust, in a mixing bowl combine whole wheat flour, oat flour, cornmeal, and baking powder
  • Add milk and oil and mix well.
  • Using greased hands, press dough into a greased 14 inch pizza pan.
  • Build up the edges slightly; snip at 1inch intervals.
  • Bake in a 425° oven for 12 to 15 minutes or till done.
  • Meanwhile, for topping, spread sauce over crust.
  • Top with pepper rings, sliced olives, and bacon.
  • Sprinkle pizza with mozzarella cheese, cheddar cheese, and Parmesan cheese.
  • In a non stick pan, jus toss 3 eggs from one side for 1min, remove carefully and place the eggs on the pizza, Return to oven.
  • Cook for 3 mins till base is crispy and eggs are cooked as per your taste.
  • Bake for 10 to 15 minutes more.
  • Sprinkle black pepper and salt and garnish with fresh parsley or basil.





Poached Eggs on Smoked Mortadella Topped With Sundried Tomato Hollandaise Served With Carrot and Potato Mash
     

Ingredients

2 Eggs
Salt to taste
1 tbsp Vinegar   
40 gms Mortadella (Smoked)   
15 gms Sun dried Tomato Paste   
2 Whole Wheat Brioche    
50 gms Hollandaise sauce   
75 gms Mashed Potatoes   
75 gms Mashed carrots   
50 gms Musk Melon   
50 gms Kiwi   
50 gms Watermelon Scoops   
30 gms Strawberries   

Method   

  • Bring water to boil in a pan. Add salt and vinegar. Crack an egg in a bowl and slip it into the simmering water till the yellow is engulfed with white. Remove and keep warm.
  • Place quarter slice of mortadella on the brioche.
  • Place the poached eggs on topand coat it with Hollandaise sauce. Gratinate until slightly brown.
  • Serve hot with carrot and potato mash and fresh fruit slices.
