Healthy Dessert Recipe Peanut Butter Cake

This easy peanute butter cake recipe, simply involves adding the ingredients in a mixer and then popping it in an oven. It's a really great recipe for a quick and healthy dessert for those of us who enjoy healthy foods that keep us full longer and satisfied. An added bonus is that this peanut butter cake recipe calls for next to no highly processed ingredients. This is a grain free, gluten free recipe, high in protein and good fats. I’ve made it a couple of times and even had it for breakfast the next day without feeling guilty!

Here's how to make this delightfully simply peanut butter cake:

1. Preheat you oven to 180 degrees.
2. In a mixer add the following and blend:
  • 3/4 cup of peanut butter
  • 3 eggs
  • About 1/4 cup of honey
  • 1 very ripe banana (I didn’t even bother cutting it up – the mixer did a good job pulverizing it)
  • 1/2 teaspoon baking soda
  • 1/3 cup chopped dark chocolate.
  • Then when everything else is combined, about 1 teaspoon of lemon juice
3. Add the batter to a greased/or lined cake tin, and bake for 25-40 minutes (or until an inserted toothpick comes out dry).

Anyway you slice it, this peanut butter cake will turn out great. It is not your regular dessert but is a good home made snack to keep around on days that you are feeling low on energy as it is power packed with good fats and real food.
